You Can’t See the Kitchen,
But You Can See the Process.

The Five Steps of the Journey

From the moment a recipe is created to the moment it's delivered, every order goes through a standardized, controlled process.

01

The Recipe Is Developed

Every menu is built on a recipe developed and tested by our chefs.

02

The Standard Is Locked In

Portion weight, cooking time, and temperature are put in writing — which is why your meal tastes the same no matter which location you order from.

03

Prep* Is Done in the Central Kitchen

Recipe-specific prep is completed in a single central kitchen and sent to our locations through the cold chain.

04

The Final Cook Begins

The final cook starts the moment your order comes in. Nothing sits ready-made at the location; every dish is cooked to order.

05

Packed and on Its Way

Hands-free portioning, leak-proof sealing, and heat-retaining transport.

* Prep (mise en place): Mizanplus takes its name from the French term “mise en place” — having every bit of prep completed before cooking begins. This principle is the foundation of the Mizanplus standardized production model.

The Mizanplus team developing recipes in the kitchen

How a Recipe Is Born

Everything starts with a recipe — but a recipe never stays just an idea in a chef’s head. It goes through a process before it reaches the menu. At Mizanplus, menus are shaped by the expertise and creativity of master chefs, and every recipe is developed with three goals in mind at once: great taste, balanced nutrition, and repeatability. That third one is the biggest difference between a restaurant kitchen and a production kitchen.

Anyone can make a dish perfectly once. The hard part is making it with the same result hundreds of times a day, by different hands, at different locations. That’s why, for us, a recipe has to pass more than the “Is it delicious?” test. It also has to answer: Can we make it exactly the same way, every time? Our menu development keeps an eye on global trends and pairs local flavors with modern culinary techniques. Ingredients are chosen at this stage, and all of them come from certified suppliers approved by Türkiye’s Ministry of Agriculture and Forestry.

From Idea to Menu

Before it reaches the menu, a Mizanplus recipe goes through a 5-stage testing process on average, which typically takes 3 weeks.

Standardized production in the Mizanplus central kitchen

How the Standard Is Set

It’s the least talked-about step of the journey, but the one that matters most. At an independent restaurant, a dish can taste different depending on who’s in the kitchen that day. If the head cook is off, the apprentice is tired, or the pot simmered a little too long, the plate comes out differently. Customers chalk it up to “not as good today” — and often never order again.

That is exactly the problem a central production model solves. Once a recipe is approved, three things are put in writing and can’t be changed:

Portion Weight

Every order gets the same portion, so you always know how filling it will be and what you're getting for your money.

Cooking Time

Texture and consistency are locked in, taking undercooking and overcooking out of the equation.

Cooking Temperature

The variable that matters most for both flavor and food safety is kept under control.

These three values are the same at every location. The result: the flavor you get from one location today is the flavor you’ll get from another tomorrow. Same recipe, same method, same timing.

Today, Mizanplus has more than 120 recipes across some 30 brands defined and on record.

Products shipped to locations through the cold chain

From Central Kitchen to Location

Production happens in two stages, and that split is deliberate.

Central Prep

Recipe-specific prep* — marinades, sauces, and measured portioning — is done in the central kitchen. Keeping it in one place is about control: the same ingredients, the same measurements, the same method. Prepped products reach our locations through cold-chain logistics, in vehicles equipped with systems that continuously monitor temperature and hygiene conditions.

Final Cook at the Location

Our locations handle only the final cook. That makes two things possible at once: the food goes out freshly cooked, and the standard stays intact. Locations don't reinterpret the recipe — they cook it at the set time and temperature.

Let’s clear up a common question: food is never cooked in advance and kept waiting. The central kitchen handles prep, not cooking. The final cook doesn’t start until your order comes in.

* Prep (mise en place): Mizanplus takes its name from the French term “mise en place,” which means having every bit of prep completed before cooking begins.

What Happens the Moment You Order?

Here’s what happens after you tap “Place Order” in the app:

01

The Order Reaches the Location

Whichever brand you order from, your order is routed to the nearest location that makes that menu.

02

Preparation Begins

Ingredients prepped to the recipe in the central kitchen go into the final cook.

03

The Dish Is Portioned

The food is portioned hands-free into BPA-free, heat-resistant containers.

04

It's Sealed

The container is sealed with leak-proof film. That seal is your proof the package hasn't been opened on its way to you.

05

It's Handed to the Courier

Your order goes into a special insulated delivery bag that helps keep it at temperature.

At Mizanplus, it takes an average of 8 minutes from the moment an order comes in to the moment it’s handed to the courier.

Frequently Asked Questions

No. What happens in the central kitchen is prep — marinating, sauces, and portioning. Cooking starts only after your order reaches the location. No pre-cooked food sits waiting at any of our locations.
